3-Ingredient Peachy Iced Tea

My friend and neighbor recently reminded me of this deliciously refreshing peach tea that she introduced me to many years ago. It was a favorite of mine but through the years, it dropped off my recipe radar. So when she kindly shared some with me the other day, I knew I had to share it with you. You only need 3 ingredients. Herbal peach tea bags, 100% peach juice and fresh mint.  It’s so light and refreshing with just a hint of sweetness from the peach juice and there’s no caffeine or added sugar. The recipe is simple and can be modified depending on the amount of tea you want to make. I brewed 6 herbal peach tea bags in about 8 cups of water (I boiled the water, turned off the heat, added the tea bags and let them steep for 4-5 minutes). I removed the tea bags, added 4 cups of 100% peach juice (I could not find 100% peach juice at Acme but I found this blend of peach and pear juice) and 3-4 sprigs of fresh mint. Place the tea in the refrigerator to chill. You can adjust the level of sweetness by how much herbal peach tea and peach juice you use. My neighbor uses equal parts peach tea and peach juice which is delicious. I tend to like my tea a little less sweet so I used more herbal peach tea (8 cups) to peach juice (4 cups). NOTE: You should be able to find 100% peach juice at Trader Joe’s.
