A Better Way to Eat Boxed Macaroni and Cheese

By adding more vegetables, you’ll eat less of the mac and cheese and add 100’s of healthy antioxidants to your fast meal.  I started by making mac and cheese from a box (I used Annie’s) but I added some extra flavor by mixing in some jarred pesto that I bought at Costco.  I steamed some broccoli in the microwave (I used a fresh head of broccoli but you could use frozen).  I put a 1/2 bag of mixed salad greens in a bowl, topped them with the mac and cheese and steamed broccoli.  For a little heat, I sprinkled everything with black pepper and hot sauce.
