Lunch bowls are an excellent way to combine nutrient powerhouses all in one bowl!  My son, Jonathan, sends me his own versions from his blog, foodishowmymom .  Anything goes.  Add Greek yogurt, sweet potatoes, broccoli, avocado, red onion and sunflower seeds.  Or brown rice, hummus, canned tuna, broccoli, red onion, olive oil and vinegar.  Even a tofu General Tsos, with sauteed tofu, egg, carrot and onion over brown rice.
