Lunch Bowl on a Plate


Here’s a creative lunch idea (or breakfast or dinner) from my son’s blog  It’s hearty but healthy with backyard chicken eggs (go ahead and eat the yolks, they’re heart friendly), roasted sweet potatoes, broccoli, red onion, brown rice and a sprinkle of feta cheese.  Nutrition Note: Check out the vegetable color palate on this plate; red onions, orange sweet potatoes, and green broccoli.  More color = more cell protective antioxidants.
