Here’s a deliciously, creamy, slightly sweet and tangy treat that is a nutrient knockout. It has a powerful punch of calcium, protein, vitamin D, fiber and healthy probiotics.
Add 1 tablespoon of chia seeds to 4-6 ounces of strawberry kefir (a wonderful yogurt-like beverage). I like to mix this in a small glass jar with a lid so I can take to work. After mixing, place it in the refrigerator overnight (the longer the better). The chia seeds will thicken the kefir so the next day you have this yummy, creamy, pudding-like treat with a little crunch from the chia seeds. To make this even more delicious, add some chopped, fresh strawberries and bananas.
Nutrition Note: Chia seeds are a good source of calcium, protein and fiber and kefir has more strains of healthy bacteria than yogurt (and it’s 99% lactose free).
