Here’s a fantastic recipe from Melissa Clark. Shakshuka originated in North Africa and is a dish in which eggs are baked in a spicy tomato sauce (similar to Mexican huevos rancheros). It’s a simple meal to prepare, even during a busy work week, and makes an excellent breakfast the next day. Start by sautéing onions and red peppers until softened. Add garlic, cumin, paprika and cayenne. Then add a can of chopped tomatoes and simmer for about 10 minutes.
Crack 6 eggs on top of the sauce and bake in a 375 degree oven for 15 minutes (until eggs are set, similar to poached eggs). Top with chopped cilantro or parsley and hot sauce. Serve with whole grain bread and a mix green salad.
