I got to taste these the other day at a meeting at work. A colleague made them for a snack and shared a bite with me. So yummy! Dates, walnuts (or almonds, I made two versions for this post) and 100% cocoa powder. That’s it! Put all three ingredients in a food processor and process until smooth. Roll into bite size pieces and enjoy!

Chocolate, Date and Walnut Bites
1 cup walnuts or almonds, 1 cup dates (pits removed), 1 tablespoon 100% cocoa powder
Place all ingredients in a food processor. Blend until smooth. Using a heaping teaspoon, roll into bite size pieces. Store in a sealed container in the refrigerator. Makes 14-18 balls. Serving size is 2 balls.
Nutrition Note: With the sweetness coming naturally from the dates, there’s no need to add sugar. The protein, healthy fat (walnuts are source of plant-based omega-3 fatty acids) and calcium (almonds are good source of calcium) makes these little energy bites perfect for a between meal energy boost. And the cocoa satisfies your chocolate cravings.
