90 Second Dinner for Breakfast Bowl

Dinner for breakfast. I like the concept suggested by this month’s Recipe Redux team. Many of us get in the rut of choosing traditional breakfast foods (cereal, muffins, pancakes, bagels and waffles) that start our day with a large dose of refined carbohydrate and added sugar. A savory breakfast is a low sugar, high protein, satisfying alternative. But to get you out the door in the morning, it has to be fast. This dinner for breakfast bowl can be cooked and assembled in about 90 seconds using whole wheat tortillas, eggs, black beans, salsa and guacamole.

90 Second Dinner for Breakfast Bowl

Ingredients

1 6-inch whole wheat flour tortilla

1 egg

2 tablespoons black beans

2 tablespoons salsa

1 tablespoon guacamole

1 tablespoon grated cheddar cheese

1 tablespoon plain Greek yogurt

Optional: salt, pepper, chopped cilantro, scallions, hot sauce

Directions

Press the tortilla into a bowl. Crack the egg on top of the tortilla. Cover with a paper towel and microwave for 60 seconds. Top with black beans, salsa, guacamole, cheese and yogurt. Add optional ingredients if desired.
