Turkey, Apple Sausage Patties with Fennel and Sage

Are your eggs at breakfast feeling a little lonely? Bacon and sausage are not the healthiest partners for our eggs but I found a delicious way to get sausage back on your plate. These apple turkey sausage patties have that quintessential sausage taste from fresh sage and fennel seeds without the unwanted nitrates, nitrites, extra sodium and saturated fat. No need to limit them to breakfast, they make a fast and easy “breakfast for lunch or dinner” any day of the week.

Turkey Apple Sausage Patties with Fennel and Sage

Ingredients

1 tablespoon olive oil

1 small onion, finely diced

1 small to medium apple, peeled and finely diced

1 pound ground turkey breast

1 tablespoon fresh sage, finely chopped

2 teaspoons brown sugar

½ teaspoon fennel seed, chopped

1 tablespoon reduced sodium soy sauce

Freshly ground pepper

Directions

Heat oil in a large nonstick pan over medium heat. Add onion, cooking until softened about 3 minutes. Add apples and cook for another 2 minutes. Transfer to a large bowl, allowing mixture to cool for 5 a few minutes. Wipe out the pan because you will use for sautéing the sausage patties.

Add the turkey, sage, sugar, fennel, soy sauce, pepper to the bowl with the apples and onions. Gently mix until combined.

Coat the pan with cooking spray and put on medium heat. Using 1/3 cup measuring cup, scoop turkey mixture and add to prepared pan. Press to flatten into a patty. Cook patties until browned on both sides, about 3-4 minutes per side. You may need to wipe out the pan and recoat with cooking spray for the next batch. Makes 8 patties.  Top with an additional splash of soy sauce or maple syrup.
