Roasted Tofu and Green Beans with Honey-Sesame Dressing

Cooking everything on one sheet pan is my favorite way to get dinner on the table fast with minimal clean-up. You can roast almost any type of vegetable or protein on a sheet pan, tossing them with a homemade or store bought sauce or just olive oil, salt and pepper. For a delicious vegetarian meal, try roasting tofu. In my opinion, tofu is the unsung hero of the protein world. It’s convenient, inexpensive, versatile and yes, when prepared correctly, delicious. Crank the oven up to 400-450 degrees to get a dense, chewy texture. Roast green beans along side of the tofu for a one pan meal.

Honey-Sesame Tofu with Roasted Green Beans

Ingredients

12 ounces extra-firm tofu, drained and pressed dry

2 tablespoons reduced-sodium tamari (soy sauce)

2 cloves garlic, minced

1 tablespoon honey

1 tablespoon fresh ginger, minced

2 teaspoons toasted sesame oil, divided

1/4 teaspoon red pepper flakes

1 pound fresh green beans, trimmed

1 tablespoon olive oil

Chopped scallion and sesame seeds for garnish

Directions

Preheat oven to 400 degrees. Line a baking sheet with foil or parchment paper. Lightly coat with cooking spray. Wrap tofu in paper towels, top with a weight and set aside for 15 minutes. Meanwhile, whisk soy sauce, garlic, honey, 1 teaspoon of sesame oil, and red pepper flakes in a large bowl. When tofu has drained, slice into 8 rectangles. Add to soy sauce mixture and gently toss to coat. Place tofu rectangles on one half of the prepared baking sheet. Top each slice with remaining sauce. Using the same bowl, add the green beans, 1 tablespoon of oil and 1 teaspoon of sesame oil, tossing to coat. Place on other half of baking sheet. Roast in oven for 25-30 minutes, stirring green beans occasionally. Top with chopped scallion and sesame seeds.

Nutrition Note: Tofu is made from soy milk, similar to the process of making cheese. It’s rich in natural plant compounds called phytoestrogens which may be protective against certain types of cancer. A 1/2 cup of tofu provides 10 grams of protein and a significant dose of calcium and iron.
