Peanut Butter Banana Bread

I was gifted with this delicious peanut butter bread from my good friend and colleague, Wendy Cramer. This moist and flavorful bread is easy to make, freezes well (so make extra) and chock full of healthy ingredients like flax seeds, bananas and natural peanut butter. My dilemma with quick breads is how to bake them long enough so the middle is done without drying them out. Wendy’s solution, divide the batter between two 4 x 8 inch loaf pans instead making one large bread. She also swears that adding an extra tablespoon of oil to the batter just before pouring it into the loaf pans keeps the bread moist and luscious. Here’s her no fail recipe.

Wendy’s Peanut Butter Banana Bread

Ingredients

2-3 ripe bananas, peeled and sliced

2 eggs

1/3 cup plain or vanilla yogurt (or buttermilk)

¾ cup natural peanut butter

3 tablespoons melted butter

½ cup sugar

½ cup brown sugar, packed

¼ cup ground flax seed

¾ teaspoon baking soda

1 teaspoon cinnamon

1 1/2 cups all-purpose flour

1 tablespoon canola oil

Directions

Preheat oven to 350 degrees. Spray (2) 4 x 8 inch loaf pans with cooking spray. In a large bowl, add banana slices and mash with a fork. Add eggs, yogurt, peanut butter and melted butter. Mix until well combined. Add the sugars and mix well. In a medium bowl, add flax seed, baking soda, cinnamon and flour. Stir until blended. Add flour mixture to banana mixture and stir until combined. Add 1 tablespoon canola oil and stir. Divide batter between the two loaf pans and bake for 45-50 minutes. Check the center of the loaf with a toothpick, if it comes out clean, the bread is done.

Note:  Here are a few variations and substitutions (if desired):

Substitute almond butter for peanut butter.

Use white whole wheat flour for all-purpose flour.

Add 1/2 cup chopped peanuts or walnuts for extra crunch.

Nutrition Note: If you can’t find flaxseed meal, you can grind your own. A coffee grinder makes the perfect spice and seed grinder. Add whole flaxseeds to the coffee grinder and pulse for a few seconds until seeds form a course meal.
