This Cauliflower Tikka Masala with Chickpeas is ready in about 10 minutes and does not require a shopping cart full of groceries. The simple addition of a 15 oz. jar of tikka masala sauce to the cooked cauliflower gives this dish all of the herbs and spice it needs. The chickpeas help to balance out the meal’s nutrient content, and if desired, cubed tofu could also be added for extra protein. For a creamy condiment to put on top, try a dollop of plain yogurt and to brighten the flavor, garnish with fresh cilantro.
1 tablespoon canola oil 4 cups cauliflower florets 1/4 teaspoon salt 1/4 cup water 1 15-ounce can chickpeas, rinsed 1 15-ounce jar Patak’sTikka Masala simmer sauce For toppings, fresh cilantro and plain yogurt, if desired Heat oil in a large skillet over medium-high heat. Add cauliflower; cook; stirring occasionally, until lightly browned, about 5 minutes. Add water, chickpeas, and sauce; cook, stirring occasionally, for about 4-5 minutes.
