Uncle Doug Crosby’s Whole Grain Oat Cereal with Millet and Barley

We all have that one recipe that has been passed down from a long line of friends and relatives. It fills us with wonderful nostalgia and makes any occasion a special one. The best part is that these recipes are usually fool-proof because they’ve withstood the test of time. One of our clients, Lizette, has kindly shared a long-loved recipe of hers with us and we are here to share it with you!  Lizette says that Uncle Doug Crosby’s hot cereal has been enjoyed by both family and friends over the years.

Since it is made from a medley of grains (five to be exact), this cereal has an abundance of nutrients. To start, barley has the highest amount of cholesterol-lowering fiber amongst other grains and will help to give this hot cereal its chewy texture. Millet is packed with iron and calcium and oats are rich in antioxidants. The addition of flaxseed helps increases the protein content of this cereal and also adds a dose of omega-3 fats.

Once the hot cereal is prepared, make it your own by adding fresh berries, chopped nuts, a dollop of yogurt or a drizzle of honey.

Uncle Doug Crosby's Whole-grain Oat Cereal with Millet and Barley

Ingredients

1 cup cracked wheat (bulgur)

1 cup barley

1 cup millet

1 2/3 cup flaxseed

2 2/3 cups rolled oats

2/3 cup short brown rice

1 2/3 cups steel-cut oats

Optional: 1/2 cup dried fruit, 1/2 cup unsweetened shredded coconut

Directions

Combine all ingredients in a large bowl. To make the cereal, add 1 cup cereal mixture to a large saucepan. Add 2 1/2 cups fat-free milk or plant milk and 2 cups water *. Cook on medium heat until it bubbles, reduce the heat, cover with the lid ajar, and cook for 30 minutes, stirring occasionally. Top with chopped nuts, berries, yogurt or honey.

*At this step, you could add 1/2 cup dried fruit and/or unsweetened coconut if desired.

Note:  You can batch cook the cereal and keep it in the fridge. I use disposable coffee cups with lids so I can take them to work. Microwave to heat and eat. Store the dry cereal mixture in an airtight container in your pantry.
