Kale Salad with Fresh Strawberries, Feta and Pistachios

Our garden is overflowing with kale this year (a nice problem to have) so this has become my “go to” salad. It’s fast and easy with only 4 ingredients that compliment each others flavors and textures, soft and salty feta, sweet and juicy strawberries, slightly bitter kale, and crunchy pistachios. I love kale because it’s such a hardy salad green. It last for a long time in your fridge (so less waste) and it holds up well even after adding salad dressing. My easy Balsamic Dijon Vinaigrette is perfect with this salad.

Kale Salad with Fresh Strawberries, Feta and Pistachios

Ingredients

1 bunch of kale, stems removed and thinly chopped (about 6 cups)

1 cup sliced strawberries

1/3 cup feta cheese, crumbled

1/3 cup pistachios

Directions

  1. Place kale into a large bowl. Top with strawberries, feta and pistachios.
  2. Toss gently.
  3. Serve with Balsamic Dijon Vinaigrette.
