Chocolate Cherry Haystacks

These chocolate cherry haystacks from registered dietitian, Ellie Krieger, require just 3-ingredients and only 20 minutes to make. It’s hard to believe these delicious, yummy morsels are filled with healthy ingredients. Fiber-rich shredded wheat and two anti-inflammatory powerhouses, dried cherries and dark chocolate come together to create a treat that will satisfy your sweet tooth and your chocolate cravings.

Chocolate Cherry Haystacks

Ingredients

3 large shredded wheat biscuits or mini-shredded wheat bites (no sugar added), about 3/4-1 cup

6 ounces dark chocolate (60% to 70% cocoa solids), chopped

1/3 cup dried cherries (2 ounces)

Kosher salt, optional

Directions

  1. Line a baking sheet with wax paper. With your hands, crush the shredded wheat into thread-like pieces into a small bowl.
  2. Place the chocolate on top of a pan filled with a few inches of water. Make sure the bottom of the pan does not touch the water. Bring the water to a simmer. Melt the chocolate, stirring frequently, for about 1 minute or until it has all melted. Remove the chocolate bowl from the heat. Add the crushed shredded wheat and the cherries to the chocolate and stir until well coated.
  3. Using a tablespoon, scoop stacks of the cereal-chocolate mixture onto the wax paper, shaping with fingers as needed. Sprinkle with salt, if desired. Place in the refrigerator to cool and set, about 15 minutes. Serve at room temperature.

      Thank you. They are sweet (but not too sweet) and crunchy. I think they will enjoy eating and making them- they are super easy to make.
