One of the best ways to elevate your meals is to have a few easy sauces in your fridge. Green sauces can be found in so many cuisines around the world. Basil-based pesto in Italy, salsa verde in Mexico, and Chimichurri from Uruguay and Argentina. Chimichurri has a tangy, salty, spicy flavor from fresh parsley, olive oil, garlic, red chili, and vinegar. Traditionally this is served with grilled meat but I love it on top of just about anything. Eggs, grilled chicken, fish, and roasted veggies. It has become a go-to sauce for me.





Chimichurri
Ingredients
1/2 cup extra virgin olive oil
2-3 tablespoons red wine vinegar
1 cup finely chopped parsley
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
1/2 teaspoon kosher salt
freshly ground pepper
Directions
- Mix all ingredients together in a bowl. Set aside for at least 10-15 minutes to allow the flavors to come together. You can make it ahead of time and refrigerate until you need it.
- Use the sauce on any grilled meat or fish, roasted potatoes and veggies, eggs, steamed rice or other whole grains.
Note: You can also add other fresh herbs like basil, mint, and oregano along with the parsley.
