Chimichurri

One of the best ways to elevate your meals is to have a few easy sauces in your fridge. Green sauces can be found in so many cuisines around the world. Basil-based pesto in Italy, salsa verde in Mexico, and Chimichurri from Uruguay and Argentina. Chimichurri has a tangy, salty, spicy flavor from fresh parsley, olive oil, garlic, red chili, and vinegar. Traditionally this is served with grilled meat but I love it on top of just about anything. Eggs, grilled chicken, fish, and roasted veggies. It has become a go-to sauce for me.

Chimichurri

Ingredients

1/2 cup extra virgin olive oil

2-3 tablespoons red wine vinegar

1 cup finely chopped parsley

2 cloves garlic, minced

1/4 teaspoon red pepper flakes

1/2 teaspoon kosher salt

freshly ground pepper

Directions

  1. Mix all ingredients together in a bowl. Set aside for at least 10-15 minutes to allow the flavors to come together. You can make it ahead of time and refrigerate until you need it.
  2. Use the sauce on any grilled meat or fish, roasted potatoes and veggies, eggs, steamed rice or other whole grains.

Note: You can also add other fresh herbs like basil, mint, and oregano along with the parsley.
