Pina Colada “Light” Cream

How frozen bananas transform into creamy, luscious, “ice cream” is simply magical! Use them to create your favorite ice cream flavors such as my favorite, Pina Colada. Whirl together canned pineapple, coconut, and frozen bananas for a deliciously creamy but much lighter version of ice cream. Don’t throw away those overripe bananas. Peel them and freeze them in a ziplock bag so you can make this light cream anytime your ice cream sweet tooth starts aching!

Pina Colada Frozen Light Cream

Ingredients

2 frozen bananas, broken into smaller pieces

1/2 cup canned crushed pineapple, in its own juice

1-2 tablespoons shredded coconut

Directions

  1. Place the bananas and pineapple in a food processor. Blend until creamy and smooth.
  2. Serve topped with coconut. Also, top with extra pineapple and whipped topping, if desired.
