There are many chia seed pudding recipes on social media and I’ve tried several but what I love about this one, is that it tastes really good! It’s thick, creamy and chocolatey, and the chia seeds give it a texture similar to tapioca pudding (but in a good way). So here you have a delicious chocolate pudding that contains no dairy, no added sugar (the sweetness comes from dates), no saturated fat, and it’s vegan and gluten-free! Creamy Chocolate Chia Pudding
Ingredients
1/4 cup cocoa powder
1/4 cup chia seeds
1 1/2 cups almond milk
6 Medjool dates
1 teaspoon vanilla extract
Directions
- Add cocoa powder and chia seeds to a 4 cup measuring cup.
- In a blender, combine almond milk, dates, and vanilla. Blend until smooth.
- Pour the blended almond milk over the chia seeds and cocoa powder. Stir with a whisk until combine and smooth. Pour into 3 containers with lids. Refrigerate for several hours or overnight. Top with berries and whipped cream, if desired.
