Lean (93/7) ground turkey is a healthier alternative to ground beef but the lower fat content can result in a drier, more dense texture. Cook’s Illustrated provided us with a solution. Create a ground turkey base using a panade of bread crumbs, milk and shallots to keep the turkey tender and juicy. Once you create your ground turkey mix, use it for making meatballs, burgers or meatloaf. If not using right away, you can keep in the fridge for 2 days or up to a month in the freezer.
Ground Turkey Mix
Ingredients
1 shallot, rough chop (1/3 cup)
1/4 cup bread crumbs
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 pound 93 percent lean ground turkey
1/4 cup milk
1 tablespoon Worcestershire sauce
Directions
Process shallot, bread crumbs, salt and pepper in food processor until shallot is finely chopped, about 20 seconds. Add turkey, milk, and Worcestershire sauce, pulsing for about 8-10 pulses. Transfer to a bowl, cover and refrigerate until ready to use.
