Egg, Spinach and Creamy Swiss Cheese Breakfast Sandwich

Ingredients

1 whole grain sandwich thin or whole wheat English muffin

1 egg, fried, poached or scrambled (or 2 egg whites)

1 Creamy Swiss wedge (like The Laughing Cow)

Baby spinach, sliced grape tomatoes

Dash of hot sauce

Salt and pepper to taste

Directions

Toast sandwich thin or English muffin. Spread each side of toast with Swiss cheese wedge. Top with cooked egg, baby spinach and tomatoes. Add a dash of hot sauce and salt and pepper to taste.

Note: Don’t limit this sandwich to breakfast. It makes a healthy, fast and easy lunch or dinner too!
