Soy curls? I was skeptical at first but this 100% non-GMO soy bean product from Butler foods is amazing! They have the texture of chicken or beef and can be seasoned to match the flavors of your favorite meat-forward dishes. This recipe was adapted from one at Bon Appetit which highlights the seasonings for tacos but I can’t wait to try these soy curls with BBQ sauce, in stir fries and even doused in wing sauce with a crumble of blue cheese.












Vegan Tacos with Soy Curls
If using the entire 8 ounce package of soy curls, you will need a large skillet. If you don’t have a large enough skillet for soy curls to fit in a single layer, I suggest cooking them in the two batches so they can brown instead of steam. If using half the package, 4 ounces, you can reduce the seasonings in half and this should serve about 4 people.
Ingredients
-8 ounce package Butler soy curls (see note above)
-3 cups low sodium vegetable broth
-3 tablespoons nutritional yeast
-4 teaspoons cumin
-2 teaspoons smoked paprika
-2 teaspoons garlic powder
-2 teaspoons onion powder
-1 teaspoon kosher salt
-1/2 teaspoon cayenne
-3 tablespoons vegetable or olive oil
Suggested ingredients for tacos (or taco salad, see note below): corn tortillas, salsa, plain yogurt, sliced radishes, pickled jalapenos, chopped scallions, chopped lettuce and tomato, hot sauce, lime wedges, pickled red onion, chipotle mayo, corn.
Directions
- Rehydrate soy curls: Heat vegetable broth in a small saucepan until warm. Add nutritional yeast. Stir to dissolve. Place soy curls in a medium bowl and pour the broth over the curls. Weigh down with a small plate to submerge the curls and let sit for 10-15 minutes.
- While soy curls are rehydrating, in a small bowl mix together cumin, smoked paprika, garlic and onion powder, salt, and cayenne.
- Drain soy curls, gently squeezing to remove excess liquid. Return them to the bowl. Add the spice mixture and toss to coat. Using hands is easiest.
- Heat oil in a large skillet on med/high. Add the spiced soy curls and toss around in the skillet to coat with oil. Spread into a single layer. Cook, tossing occasionally, until browned around edges, 8-10 minutes.
- Build your tacos with any or all of the suggested ingredients.
Note: These seasoned soy curls can easily be used to make a taco salad. Fill bowl with chopped lettuce and top with soy curls and any or all of the suggested ingredients above. Instead of corn tortillas, top with crumbled tortilla chips.
