Friday Night Taco Pizzas with Zucchini Ribbons

These little pizzas make for a fun Friday or Saturday night dinner with the kids.  The “crust” is a whole grain corn tortilla which makes a perfect serving size for young children.  They are topped with a homemade spicy bean spread, seasoned ground turkey, a sprinkle of cheddar cheese and plain yogurt.  You could create a pizza “bar” so the kids could assemble their own pizzas.  For additional toppings, you may want to add chopped cilantro, black olives, red bell peppers and hot sauce.

Fora fun vegetable side-dish, make zucchini ribbons.  Using a vegetable peeler, peel long ribbons of zucchini, turning the zucchini as you peel.  Stop when you get down to the seeds.  Steam for about 2-3 minutes.

Nutrition Note:  You could easily make this a vegetarian dish by substituting shredded tofu for the ground turkey or just use the beans as your protein source.
