Apricot Glazed Pork Tenderloin

Pork tenderloin is a good choice for a lean, fast cooking protein. This recipe is simple with only 3 ingredients: pork tenderloin, whole grain mustard, and apricot preserves. In a small bowl, mix together 1/4 cup of whole grain mustard and 1/4 cup of apricot preserves.

Rub the pork tenderloin with a small amount of olive oil.  Season with salt and pepper. On a hot grill, sear the pork on all sides. Brush the pork with the apricot glaze. Grill for about 10 minutes on each side or until the pork is at 145 degrees and a glaze forms on the tenderloin.

Nutrition Note: The serving size for meat is 3 ounces, that’s about the size of a deck of cards or the palm of your hand.  Most adults need about 5-6 ounces of protein-rich foods per day but some of this protein should come from plant sources like legumes (beans and lentils), nuts, seeds, and whole grains.
