Icelandic Provisions skyr (somewhat like Greek yogurt) is made using the milk from the oldest and largest dairy in Iceland. What makes it different, is that unlike Greek yogurt which is drained, it gets it’s thick, creamy texture from a special mix of live cultures unique to skyr. Skyr is high in protein (15 grams per 5 ounces), low in saturated fat and the cultures used in making skyr result in a creamy, slightly sweet product (no bitterness). Even the flavored varieties have very little added sugar (just a little over a teaspoon). Try the peach with cloudberry, it’s luscious.
