As we move into the cold months of January and February, I plan to hibernate with a bowl of my favorite soup. Winter is the perfect time to cook up big batches of nourishing, homemade soup. Soup is so easy to make. You can follow a recipe and make your own broth but for a fast weeknight soup, I’ll often toss together some leftover roasted vegetables, canned beans, cooked chicken, if I have any, with some low sodium vegetable broth.
