I am so lucky to have a bounty of garden-fresh herbs to cook with all summer long. But when winter sets in, I’m back to buying overpriced, uninspired herbs from the supermarket. No longer! Thanks to another great tip from Cooks Illustrated, you can dry herbs in the microwave. Yes, the microwave! In about 2-3 minutes, your fresh herbs are completely dry, preserving their flavor and aroma. Simply lay the herbs on a paper towel, cover with another paper towel and microwave on high for about 2-3 minutes, depending on the moisture content of the herb. That’s it! Store them in airtight containers (I use recycled jars with lids). When the snow and cold set in, your meals will have a taste of summer. An added bonus of microwaving herbs is a deliciously scented kitchen!
Note: I dried mint, thyme, rosemary, oregano, and sage. Basil and parsley did not retain their flavor when dried.
