An Easy Marinade to Keep in Your Fridge

Sometimes the difference between ordering take out and cooking a healthier meal at home is simply having a marinade in your fridge. All you need is some chicken, fish or even tofu, and you’re just a few steps away from a delicious dinner on the table. This is my go-to marinade when I’m making quick weeknight chicken. Simply combine the ingredients in a jar and give it a shake. Pour the marinade over chicken (I like drumsticks), let them marinate for 30 minutes then roast them on a sheet pan. Easy, peasy!

Lemon Herb Marinade

Ingredients

1 garlic clove, minced

1 tablespoon fresh rosemary, minced or 1 teaspoon dried rosemary

1 tablespoon fresh sage, minced or 1 teaspoon dried sage

1 heaping teaspoon Dijon mustard

1 heaping teaspoon grainy mustard

1 teaspoon honey

Zest and juice of 1 lemon

3 tablespoons extra virgin olive oil

1/2 teaspoon salt

1/4 teaspoon ground pepper

Directions

Combine all of the ingredients in a medium-sized jar with a tight fitting lid. Shake until blended. Store the marinade in the refrigerator for up to 10 days.

For chicken: Pour marinade in a large ziplock bag and add chicken (drumsticks, thighs or breasts). Marinate for 30 minutes to 1 hour in the refrigerator before grilling or roasting.
