Fresh strawberry season is right around the corner (it really is!) so here’s a new way to enjoy them. Roast them! Roasting strawberries intensifies their flavor, making them sweeter, and as a friend commented, “it makes them taste more like strawberries”. Once roasted, serve them over yogurt, ice cream, oatmeal, cold cereal, as jam on toast, or just as is for a naturally sweet treat. If the strawberries are out of season, sprinkle them with a little sugar before roasting to enhance their sweetness. You can roast other fruit like blueberries, pineapple, and peaches. Store them in a jar or other container in the refrigerator for about 5-7 days but for me, they were gone in a day or two.





Roasted Strawberries
Ingredients
1 container fresh stawberries
1-2 tablespoons sugar, if desired
Directions
- Set oven to 400 degrees. Cut strawberries in half. Place on a sheet pan lined with parchment paper. If using sugar, sprinkle sugar over the strawberries.
- Roast in the oven for 20-30 minutes until the strawberries have softened and their juice has begun to caramelize.
- Serve over yogurt, ice cream, oatmeal, cereal, on toast, as is with a dollop of whipped cream. You can also use them as the filling for a pie.
