Juicy watermelon, sweet blueberries, fresh mint and salty feta cheese create a symphony of summer flavors in every bite. Best of all, it takes 10 minutes to assemble.
4th of July Celebration Salad
6 cups watermelon, cubed
1 package blueberries
½ cup mint, roughly chopped
½ cup feta cheese
Combine watermelon, blueberries and mint in a large glass bowl, tossing lightly to combine. Sprinkle with feta cheese.
Additional options: To make this a bit more savory, you could add chopped red onion and drizzle with a balsamic vinaigrette dressing.
