Crispy Parmesan Snap Peas

Another easy to assemble recipe from The Forest Feast Gatherings cookbook. If fact, this is so easy it’s not really a recipe as much as it is combining 4 ingredients and baking them. This can be served as an appetizer or a vegetable side. You could swap other veggies for the snap peas. I think this would be great with cauliflower, asparagus, green beans or Brussels sprouts. I guarantee everyone will love it!

Crispy Parmesan Snap Peas

Ingredients

4 cups snap peas

1/2 cup grated Parmesan cheese

1/2 cup homemade whole wheat breadcrumbs or Panko

2 tablespoons olive oil

A sprinkle of salt, pepper, cayenne, garlic powder

Lemon wedges, if desired

Directions

  1. Set oven to 425 degrees. In a large bowl, add the snap peas, cheese, bread crumbs and olive oil. Toss until combined and spread evenly on a parchment lined baking sheet.
  2. Sprinkle with salt, pepper, cayenne pepper, and garlic powder.
  3. Bake 15-20 minutes until crispy and browned. Serve with lemon wedges, if desired.
