Light and Easy Mac and Cheese

Macaroni and cheese is delicious but we all know how rich and energy dense it can be. Not to mention the time commitment of making a cream sauce and precooking the pasta. Well, with this just as delicious recipe, there is no need to make a sauce, no need to precook the pasta and it’s lightened up with the addition of low fat cottage cheese. If you want a quicker way to mac and cheese without it coming out of a box, you will love this recipe!

Easy Mac and Cheese

Ingredients

16 ounce container 1% cottage cheese

1 quart (4 cups) 2% low fat milk

1/2 teaspoon nutmeg

1/2 teaspoon ground pepper

16 ounces sharp cheddar cheese, grated

16 ounces whole wheat pasta, uncooked

Directions

  1. Set oven to 375 degrees. Spray 9 x11 or 9 x 13 inch baking dish with cooking spray.
  2. In a blender, puree cottage cheese, milk, nutmeg and pepper until smooth. Pour into a large bowl.
  3. Add all but 1/2 cup cheddar cheese and uncooked pasta. Stir until combined.
  4. Pour into prepared baking dish. Cover with foil. Bake 40 minutes covered. Uncover, top with remaining 1/2 cup of cheese and bake an additional 30 minutes.
