TikTok has made these cottage cheese bagels famous but it seems the recipe first appeared on the MidEast American Dairy Association’s website. The original recipe claims only 3 ingredients, if using self-rising flour, but since I never have this type of flour in my pantry, I added baking powder and salt to the recipe. I also swapped half of the all-purpose flour with whole wheat to boost the fiber and whole grain goodness. Using low-fat cottage cheese boosts the protein but plain Greek yogurt works just as well. As crazy as it seems, this recipe really works and it’s so easy. The bagels are soft and chewy inside and crispy, crunchy outside. Each bagel has over 10 grams of protein and much lower calories and carbs compared to a typical bagel.














Protein-Packed Cottage Cheese Bagels
Ingredients
1 cup low-fat cottage cheese
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 egg, beaten
Optional toppings: sesame seeds, Everything Bagel Seasoning, cinnamon sugar
Directions
- Turn oven to 375 degrees and line a baking sheet with parchment paper. In a food processor or small blender, whip cottage cheese until smooth, this should take less than a minute.
- In a medium bowl, add flours, baking powder, and salt. Whisk together. Add whipped cottage cheese and stir until combined. Turn out onto counter and knead until it comes together into a round disc. If dough is too sticky, use a little bit of flour on your hands and counter.
- Cut the dough into 4 equal portions. Roll each into a 6-8 inch rope. Form into a circle, pressing the ends together. Place on parchment-lined baking sheet.
- Brush each bagel round with egg wash and sprinkle with desired toppings.
- Bake 20-25 minutes. The bagels should be golden brown. Cool on wire rack.

Those look delicious! Do you have any with almond flour or coconut flour?
I have not made them with these types of flours but it’s worth a try. I did make them with 100% white whole wheat (Golden Wheat) and this worked well.
