Kamut Hot Cereal with Apricots, Toasted Pecans and Coconut

Need a break from oatmeal? Here’s a delicious, high protein, high fiber, nutrient-packed alternative, Kamut cereal. I’ve used Kamut in salads (see my Kamut Salad with Arugula and Strawberries post) but Bob’s Red Mill sent me a sample of Kamut cereal to try. It has a nutty, crunchy texture, which I love. Here’s another nutritious cereal to add to your breakfast line-up.

 

Kamut Hot Cereal with Apricots, Toasted Pecans and Coconut

Ingredients

1 cup Kamut cereal

3 cups fat-free or low-fat milk

8 dried apricots, chopped

1/2 cup pecans, chopped and toasted

4 tablespoons coconut, toasted

Directions

Heat milk in a 2 quart saucepan, when it comes to a simmer, add Kamut cereal. Cook, uncovered, for 15 minutes, stirring occasionally. Top with chopped dried apricots, toasted pecans and toasted coconut.

Nutrition Note: 1 cup cooked Kamut cereal has 150 calories, 7 grams of protein, 7 grams of fiber. Kamut has a natural nutty sweetness so I did not need to add sugar, other than the natural sugar in the apricots and coconut. This is the first food product I’ve seen with the NEW Nutrition Fact Panel. Notice the large bold calorie content, realistic serving size, listing of added sugar (which is 0 for Kamut) and a new list of nutrients (Vitamin D, calcium, potassium and iron).

      I got it directly from the Bob’s Redmill Website but Whole Foods and Moms Organic Market might carry it. If not, buy regular Kamut and put it in a food processor or coffee grinder to grinder. The cereal is just ground Kamut.
