This recipe was sent to me by a friend and I was pleasantly surprised by these little bites. I knew the peanut butter and chocolate chips would be delicious but I wasn’t sure about the addition of beans. The beans add creaminess, texture and of course, essential nutrients and fiber but thankfully you can’t detect any “beany” flavor in these slightly sweet snack bites. The ingredients are simple and the directions are super easy. They make an excellent “on the go” snack when mid-afternoon hunger sets in.
Peanut Butter, Chocolate Chip, (and Bean) Energy Bites
Ingredients
1- 15 ounce can white cannellini beans (drained, rinsed and dried on a paper towel)
1/2 cup all-natural peanut butter (the one you have to stir)
1/3 cup brown sugar
1 teaspoon vanilla extract
1/2 cup old fashioned rolled oats
1/3 cup dark chocolate chips
Chopped peanuts and coconut for rolling (if desired)
Directions
Place beans, peanut butter, brown sugar and vanilla in a food processor and pulse until combined (about 5-6 times). Add oats and process until ingredients come together and form a soft dough. Transfer to a bowl. If mixture is too soft, refrigerate 30 minutes to 1 hour. Using a tablespoon, form mixture into about 25 bite size balls. If desired, roll into chopped peanuts and coconut. Store in the refrigerator. Serving size: 1-2 balls.
