It’s all about pumpkin this time of year so bring it on because I love all things pumpkin! I can’t get enough. Overnight oats are a delicious way to add pumpkin to breakfast. It’s super easy to make and you’ll have a ready to eat, hearty breakfast waiting for you when you wake up. Mix all of the ingredients in one bowl, refrigerate overnight, there’s no cooking required. You can find an endless variety of recipes for overnight oats but I love the nutritional bonus of beta-carotene from the pumpkin in this recipe. Plus, who doesn’t want to eat pumpkin pie for breakfast?
Pumpkin Pie Overnight Oats
Ingredients
2 cups old fashioned oats
1/2 cup Kefir (plain) or plain yogurt
1 cup fat-free milk
1/2 cup pumpkin puree
1/2 teaspoon vanilla
2 tablespoons ground flax seeds
2 tablespoons maple syrup
3/4 teaspoon cinnamon
Toppings: crushed graham crackers, toasted pecans, whipped cream
Directions
Place all ingredients in a bowl. Stir until combined. Cover and refrigerate overnight. Oatmeal will be a pudding like consistency but you can add more milk if you would like it to be thinner. Top with crushed graham crackers, toasted pecans and whipped cream.
