Pear and Ginger Salad

When pears are in season, I love using them in as many ways as possible. Tossing them with a light ginger and soy dressing and serving them over greens with a sprinkle of walnuts is a fast and easy way to give them the attention they deserve.

Pear and Ginger Salad

Ingredients

1 tablespoon rice vinegar

2 tablespoons reduced-sodium soy sauce

2 teaspoons grated ginger

2 teaspoons toasted sesame oil

1/2 teaspoon honey

4 pears

1/2 cup chopped walnuts

Salad greens

Directions

  1. In a large bowl, whisk together vinegar, soy sauce, ginger, sesame oil and honey.
  2. Slice pears. Toss with soy dressing.
  3. Serve the pears over salad greens, drizzle with extra soy dressing and top with walnuts.
