When pears are in season, I love using them in as many ways as possible. Tossing them with a light ginger and soy dressing and serving them over greens with a sprinkle of walnuts is a fast and easy way to give them the attention they deserve.
Pear and Ginger Salad
1 tablespoon rice vinegar
2 tablespoons reduced-sodium soy sauce
2 teaspoons grated ginger
2 teaspoons toasted sesame oil
1/2 teaspoon honey
1/2 cup chopped walnuts
- In a large bowl, whisk together vinegar, soy sauce, ginger, sesame oil and honey.
- Slice pears. Toss with soy dressing.
- Serve the pears over salad greens, drizzle with extra soy dressing and top with walnuts.
