Kale Salad with Fresh Strawberries, Feta and Pistachios

Even though you might be getting tired of hearing about kale, this is still my “go-to” summer salad. It’s fast and easy with only 4 ingredients and each ingredient compliments one another. The salty feta, with the sweet and juicy strawberries and the slightly bitter kale, and the added texture from the crunchy pistachios. We all know how nutritious kale is but one of the best features is that its hardy leaves hold up well, even after you dress the salad. A great choice for summer BBQs.

Kale Salad with Fresh Strawberries, Feta and Pistachios


1 bunch of kale, stems removed and thinly chopped (about 6 cups)

1 cup sliced strawberries

1/3 cup feta cheese, crumbled

1/3 cup pistachios


  1. Place kale into a large bowl. Top with strawberries, feta and pistachios.
  2. Toss gently.
  3. Serve with Balsamic Dijon Vinaigrette.

Not into kale, feel free to use arugula or a mixture of Romaine and radicchio.
