Spinach and Feta Tart with a Crispy Almond Crust

It’s magical how just a few simple ingredients can result in something so delicious. Defrosted frozen spinach, eggs and a little feta cheese creates the filling but the real magic is the crust. You just take almond flour and place it at the bottom of the baking dish, top with the egg filling and once baked, the almond flour transforms into a crispy crust. And for those watching your blood sugar, it’s low in carbs and gluten-free!

Spinach and Feta Tart with Almond Crust

Ingredients

1 cup almond meal (almond flour)

4 eggs

Dash nutmeg

Salt and freshly ground pepper

1 10-ounce bag frozen spinach, defrosted and drained

1/2 cup feta, crumbled

Handful fresh sage leaves

Drizzle of olive oil

Directions

  1. Preheat oven to 400 degrees. Coat a pie plate or springform pan with cooking spray and line the bottom with parchment paper. Spread almond flour evenly on the bottom of pan.
  2. In a medium bowl, mix eggs, dash of nutmeg, 1/4 teaspoon salt and freshly ground pepper with drained spinach. Pour evenly over almond flour. Top with feta cheese.
  3. Lay sage leaves over feta, drizzle with some olive oil. Bake for 20-25 minutes until filling is set in the center.
