Grilled Cheese Tofu

If you’re skeptical of tofu or just need a new recipe, this one’s for you! It couldn’t be easier with only 4 ingredients. Simply pop the tofu under a broiler. But what really makes this special is the egg and parmesan mixture that is placed on top of the tofu. Once under the broiler, the egg and cheese puffs, creating a delicious dome of golden goodness. Grilled Cheese Tofu

Ingredients

16 ounce container firm or extra-firm tofu, drained and cut into 4 rectangles

1-2 teaspoons white miso

1/2 cup grated Parmesan cheese

1 egg

  1. Set oven to broil. Place an oven rack about 5-6 inches below the broiler. Line a baking sheet with foil (not parchment because this will burn under the broiler). Place 4 rectangles of tofu on baking sheet.
  2. Place the baking sheet under the broiler and broil the tofu about 2-3 minutes per side to get the tofu warm and slightly browned.
  3. Remove from oven and divide the miso to spread over the top of each piece of tofu. You don’t need a lot of miso, but you do need it to add some umami flavor and saltiness to the tofu. 1-2 teaspoons should be enough for all 4 rectangles.
  4. In a small bowl, whisk together the egg and parmesan cheese. Using a spoon, top each piece of tofu with this mixture.
  5. Return baking sheet to broiler and broil for about 2 minutes or until top of tofu is puffed and golden brown. Keep an eye on it. It may cook faster or slower.
  6. Serve with a large green leafy salad or a big side of steamed veggies.
