Tofu Pizza

A quick and simple version of pizza with no crust in sight! Tofu steps in as the pizza base. It’s a wonderful way to introduce tofu to those skeptical of soy because it has all the familiar flavors of pizza. And, it’s ready to eat in under 10 minutes.

Tofu Pizza

This recipe uses tomato paste rather than tomato sauce. Tomato paste has a thicker texture and a more intense tomato flavor which is a better choice considering tofu’s mild flavor.

1 package (14 ounce), firm or extra firm tofu, cut into 4 rectangles

kosher salt

2 tablespoons tomato paste (see note below)

1/2 cup grated mozzarella cheese

Parmesan cheese

Optional toppings: black olives, mushrooms, spinach, arugula, fresh basil (add basil and arugula after baking)

Directions

  1. Preheat oven to 450 degrees. Line a baking sheet with foil (not parchment paper). Lay the 4 rectangles of tofu on sheet. Sprinkle each with a dash of salt, turn over and sprinkle with a little more salt.
  2. Spread the tomato paste evenly over each piece of tofu. Add toppings (if using) and mozzarella cheese and a sprinkle of Parmesan cheese.
  3. Bake in oven for about 4-6 minutes. Turn oven to broil. Broil for about 2 minutes or until cheese is golden brown.

Note: This triple concentrated, one ingredient tomato paste is an excellent way to add rich, tomato flavor with less liquid and sodium compared to traditional bottled tomato sauce. Bonus nutrients include 2 grams of protein and 2 grams fiber per 2 tablespoons.
