This is a family favorite and very easy to make. Marinate a pound of chicken tenders in 2 tablespoons olive oil, juice from ½ a lemon, minced garlic clove, salt and pepper. Place in the refrigerator for 30 minutes or up to 4 hours.
Meanwhile, mix together the delicious tzatziki sauce using plain low-fat Greek yogurt, chopped and seeded cucumber, squeeze of lemon juice and cracked pepper. Drizzle a little olive oil on top. You can also add some chopped fresh herbs like dill, basil and oregano.
Remove chicken from the marinade and grill it on a hot, oiled grill. Once you see grill marks on the chicken pieces and the chicken is cooked around the edges, flip and cook on other side. Cooking time is about 4 minutes per side depending on thickness of chicken.
Cut a whole wheat pita bread in half. Generously spread tzatziki inside both halves, fill the pockets with the grilled chicken, lettuce, diced cucumber, chopped tomato and onion. Top with more tzatziki and enjoy!
