Waffles and pancakes are not always the best choice for breakfast. Most of full of refined flour and swimming in syrupy sweetness. Not the best combination for productive mornings. Not with these waffles (or pancakes). Whole grain oats, cottage cheese, eggs and pumpkin transform these waffles into a nutrient bundle that will power you through your morning!





Pumpkin Power Waffles
Ingredients
1 1/2 cups old fashioned oats
3 eggs
1 cup low-fat cottage cheese
1/2 cup pumpkin puree
3 tablespoons maple syrup
1/2 teaspoon pumpkin pie spice (or 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg)
Pinch salt
Directions
- Place all ingredients in a food processor or blender. Blend until almost smooth. There will be some oat pieces in the batter.
- Prepare and heat waffle iron. Add 1/2 cup batter per waffle.
- If making pancakes, spray a non-stick skillet with cooking spray, and scoop batter into hot skillet, 1/2 cup per pancake. Flip pancake when bubbles appear on top.
- Store waffles or pancakes in refrigerator and reheat in a toaster. Both freeze well.
