A Change in Dinner Plans

Another example of why prepping on the weekend helps you to eat better throughout the week.  A last minute schedule change has me eating in instead of out so I opened the refrigerator to see what I could find. Since I still had leftover salad bar fix-ins (see There’s a Salad Bar in the Fridge post) and a few other leftovers from the week (orzo and roasted cauliflower), I made a dinner bowl that my lunch bowl loving son would be proud of (foodishowmymom).  It was a mix of orzo, roasted cauliflower, garbanzo beans, peppers, sliced tomatoes and baked tofu.  I know I’m repeating myself but Costco brand pesto is a flavor saver.

A little dollop on top and it’s off to the microwave.  I finished with some cracked pepper and a few drops of hot sauce.  It may sound a little unusual but it was delicious.
