I’m excited to announce that my version of Siggi’s protein bites was highlighted in the March/April issue of Food and Nutrition Magazine. I thought some of the ingredients in the original version were expensive and once purchased, may sit in your pantry. I substituted nutritious ingredients like peanuts instead of cashews (peanuts are higher in protein than cashews), cocoa powder instead of coconut (more antioxidants and less fat), and peanut butter powder instead of almond flour because almond flour is pricey and not as versatile. Peanut butter powder is not only a lower calorie option than regular peanut butter but after adding water, can easily be used as a replacement for peanut butter.
Blend all of the ingredients together in a food processor. Form into 1 ounce balls. Store in the refrigerator and enjoy for a between meal protein boost. Makes about 16-18 bites. Serving size: 2 bites. judymatusky.comSiggi's Chocolate and Peanut Protein Bites
