The holiday season is a whirlwind of activity so I am always looking for simple, healthful holiday treats that I can assemble with little effort but still add a pretty accent to a holiday plate. These little gems, adapted from Erin Gleeson’s The Forest Feast cookbook, are truly a treasure. Dates, so naturally sweet and chewy, pair well with the hint of orange flavored tangy goat cheese. The pistachios add a nice crunch and the ruby red pomegranate seeds provide that necessary pop of holiday color. Serve them as an appetizer (they would be so pretty on a cheese platter) or as a light and easy dessert.
Dates with pistachio, pomegranate and orange zested goat cheese
Ingredients
10 pitted dates in half and seed removed
4 ounces soft goat cheese
zest of one orange
1/4 cup chopped pistachios
1/4 cup pomegranate seeds
Directions
In a small bowl, combine goat cheese and orange zest. Fill each date half with about 1 /2-1 teaspoon cheese. Top with a sprinkle of pistachios and pomegranate seeds. Serving size: 2 whole dates per person.

What a really nice and simple appetizer! I haven’t cooked from Forest Feast but I love looking through as it showcases sooo much beautiful color!
