Tilapia with Capers, Lemon and Fresh Thyme

Here’s another recipe for your 2018 fish-forward meals. It’s a winner on all fronts. Healthy, easy, fast, rich with Mediterranean flavors and very pretty on the plate. If you’re not a fan of tilapia, substitute your favorite fish. I love this recipe because you can quickly pull it together any night of the week.

Tilapia with Capers, Lemon and Fresh Thyme

Ingredients

1 tablespoon olive oil

1 tablespoon butter

2 garlic cloves, minced

15 cherry or grape tomatoes, halved

1/4 cup white wine

4 (6-oz) tilapia fillets

1 large lemon, sliced into 8 slices

6 sprigs fresh thyme

2 tablespoons drained capers

salt and pepper to taste

Directions

Heat a large skillet over medium heat, add olive oil and butter. Add garlic and tomatoes, saute for 3-4 minutes. Pour in wine and gently stir. Lay fish over tomato mixture, topping with lemon slices, thyme and capers. Cover the pan and cook at a very light simmer for 10 minutes or until fish flakes easily. Add salt and pepper to taste.
