This British inspired dish makes for a very easy breakfast, lunch or dinner. It’s a meal that is well balanced, extremely satisfying, simple to prepare, and delicious to eat!
Beans and Greens on Toast
1 slice crusty, whole grain bread
1 tablespoons olive oil
1/2 cup beans, canned, drained and rinsed
Bunch of chopped greens; Swiss chard, kale or spinach
Salt and pepper to taste
Dash of hot sauce (if desired)
- Add 1 tablespoon olive oil to a small non-stick pan. Over medium heat, add a slice of thick and crusty whole grain bread to the pan and toast on both sides. Remove toast from the pan and place on a plate. Sprinkle with a dash of salt.
- In the same pan, quickly sauté a few handfuls of chopped Swiss chard, spinach, or kale. Remove from pan.
- Spray the pan with cooking spray. Scramble or fry an egg.
- To assemble, top the toast with 1/2 cup cooked beans, top the beans with the greens, and then the egg. Sprinkle with salt, pepper, and hot sauce if desired.
