Watermelon Pizza

Nothing is more refreshing than a wedge of juicy watermelon on a hot summer day. For a fun little twist, add some yogurt and fruit and call it pizza. Set out a toppings bar and have your kids make their own. It’s a perfect little treat for your Labor Day celebration!

Watermelon Pizza

Ingredients

1 cup low-fat Greek vanilla yogurt

2 large round slices watermelon (about 1 inch thick)

1/2 cup sliced strawberries

1 cup blueberries

2 tablespoons chopped fresh mint

Directions

Spread 1/2 cup yogurt over each slice of watermelon. Top with strawberries, blueberries, and mint. Cut each slice into 8 wedges.

NOTE: Set out a pizza toppings bar and mix and match different toppings. Try sliced peaches or kiwi. Add crunch with slivered almonds or chia seeds and sprinkle with coconut to resemble cheese. A drizzle of honey or chocolate sauce would be delicious! You can use the same toppings on the whole round slice or make each wedge different.
