Take-in Thursday

Takeout was calling.  It’s the end of the week and I had a long day at work (sound familiar).  I held off and decided to tackle whatever was left in the refrigerator.  Found some eggs, scallions I forgot to use, fresh herbs and arugula (now I have to admit, the supply line for these is straight out of my husband’s garden but you could use dried herbs and skip the lettuce),  head of broccoli (could use frozen), a monster jar of Kalamata olives from Costco, capers and cheese.  Perfect fix-ins for an omelet.  It was fast, fresh and delicious.  I toasted a few slices of pumpernickel bread and poured a glass of red wine (after all, it is the end of the week).
